Sunbutter Chocolate Chippers

It has been nice and cool around here, meaning it's been the perfect baking weather! I love those days when I don't dread starting up the oven. Yesterday I wanted to make something special for Coleden because he was such a good boy when we had to go to the emergency room the night before.

Josh had something stuck in his eye, after I convinced him we needed to go to the ER, we were there for almost 3 hours. The doctor was able to get it out, and made sure there weren't any scratches on his eye. Thank God Josh's eye is looking better everyday. Cole was such a trooper, and you could tell he was sleepy and wanting to run free.

After looking through a few cookbooks, I found a perfectly, simple recipe for some tasty cookies. 5 ingredients or less are my favorite kind of recipes, especially when I already have all the ingredients!

Sunbutter Chocolate Chippers (adapted from my cookbook "Old Fashioned Favorites")
1 cup sunbutter (you can use peanut butter if you want, we just aren't able to)
1 cup firmly packed brown sugar
1 large egg
3/4 cup milk chocolate chips

  • Preheat oven to 350F. 
  • Combine the sunbutter, brown sugar, and egg in a medium bowl until well blended. Add chips; mix well. 
  • Roll heaping tablespoonfuls of dough into 1 1/2-inch balls. Place balls 2-inches apart on UNGREASED cookie sheets. Dip fork into sugar; press criss-cross onto each ball, flattening to 1/2-inch thickness. 
  • Bake 12 minutes or until set. Let cookies stand on cookie sheets for 2 minutes. Remove to wire racks; cool completely.

Easy peasy!
