A Dairy-Free Thanksgiving!

As I mentioned in my last post, Cole and I celebrated Thanksgiving with a dairy-free feast. I was a little nervous, but also very excited to try the recipes I spent a few hours looking for. I read in a magazine article that a majority of people serve their Thanksgiving meal family-style, around the table. I stopped and thought about it, and realized I've never done that in my life. I have a huge family and we've always served supper buffet-style. After I read the article I thought about serving our feast family-style, but then decided against it. I didn't want to take all the dishes to my table, just to turn around and bring them all back, that seemed silly. As I was preparing our food, I realized I had no choice but to serve family-style, my kitchen is so small, I have practically no counter space, so family-style it is! Even better, I served everything in a storage container; less dishes, and less clean up. This is a nice way to go every once in a while.

For the third year in a row, I have failed to take a picture of my turkey (before being carved). Why can I never remember?! Maybe I'll do a turkey for Christmas this year and put hundreds of sticky notes all over my kitchen to remind me to take a picture of my turkey. Anyway, my turkey is a combination of two recipes; I use the seasonings from a McCormick recipe I found a while back and bag my turkey (my dad's method) to keep it from drying out.

Thanksgiving Turkey:
2 Tbsp. poultry seasoning
1 Tbsp. paprika
1 Tbsp. Lawry's
2 tsp. garlic powder
1 tsp. ground black pepper
3/4 tsp. nutmeg
1 whole turkey (the McCormick recipe calls for a 12-14 pound bird, I used the same amount for an 8 pound bird-I'm a wild one, I know!)
1 large onion, cut into wedges
6 bay leaves

Preheat oven to 325 degrees. Mix first 6 ingredients in a small bowl. Rinse turkey and pat dry with paper towels. Sprinkle roughly half of seasoning mixture inside turkey. Stuff with onion and bay leaves. Spread remaining seasoning over entire surface, and under skin of turkey. Place turkey inside oven bag, breast-side up. Add 1/2 cup of water, broth, or beer inside the bag and tie bag. Be sure to tuck the sides in. Roast until internal temperature reaches 165 degrees. My 8 pound turkey took about 2 1/2 hours. Remove the turkey from the oven and let stand 20 minutes before carving. Good luck carving, there's a reason Josh always does that part, I'm awful at it!

Mashed Potatoes:
For my mashed potatoes, I went about the process the same way I always do, but instead of milk, I used soy milk and instead of butter I used Earth Balance (it's a vegan butter). Simple and surprisingly tasty.

Green Bean Casserole:
I've only ever made green bean casserole using cream of mushroom soup, so I needed a recipe for homemade cream of mushroom soup and Naomi's recipe worked out great and included the recipe for the casserole as well. Cole loves green beans, but the french fried onions were probably his favorite part of this dish. It tasted just like a regular old green bean casserole, so we didn't feel like we were missing out on anything!

For the cream of mushroom soup:
8 oz. mushrooms, minced
2 Tbsp. Earth Balance Buttery Spread
1 tsp. onion powder
1 tsp. salt
pepper to taste
3 Tbsp. flour
3/4 cup stock
3/4 cup soy milk
salt and pepper to taste

For the casserole:
1/8 tsp. pepper
2 cans green beans, drained
french fried onions

To make the soup, melt EB in skillet, and add mushrooms, onion powder, salt, and pepper. Cook until mushrooms begin to soften, stirring often (5-6 minutes on medium heat). Stir in flour and cook 1 minute. Add stock, bring to simmer. Add soy milk, and simmer until sauce thickens (10-15 minutes).

Mix soup, pepper, green beans, and 2/3 cup french fried onions together and place in 8"x8" casserole. Bake at 350 degrees for 25 minutes (I baked mine for 30 because I prepared it earlier in the morning). Remove from oven, sprinkle additional french fried onions on top and bake 5 more minutes.

Gravy:
Luckily, my turkey came with a gravy packet, so I didn't put much thought into it. I just followed the directions and it was some of the best gravy I have ever tasted!

Cranberry Sauce:
I've only ever done cranberry jelly (you know, from the can). This year, I wanted to try and make my own. Thanks again to McCormick for such a great and easy recipe. By far, this was Cole's favorite dish. This is a great one to make the night before, since it's served cold. It also creates such a wonderful aroma while it's cooking. Your house will thank you.

1 cup sugar
1 cup water
1 pkg fresh cranberries, rinsed and drained
1/2 tsp. ground cinnamon
1/2 tsp. vanilla extract

Mix sugar and water in medium saucepan. Bring to boil on medium-high heat. Add cranberries, and cinnamon; return to boil. Reduce heat to medium-low; simmer 10 minutes or until cranberries burst and sauce begins to thicken; stirring occasionally. Remove from heat. Stir in vanilla. Cool to room temperature. Cover. Refrigerate until ready to serve.

Pumpkin Pie:
Okay, I won't lie, I didn't make a pumpkin pie. I never do. Josh and I attempted to make pumpkin pie one year and it went horribly wrong, so I stick with store-bought. The pie I bought wasn't dairy-free, but Cole didn't seem to show an interest in it anyway, so I didn't count it as part of the dairy-free aspect. Is that cheating? Well, it'll be our little secret.

Photo Friday!

I hope everyone had a wonderful Thanksgiving! Cole and I had a very enjoyable day. I did the majority of my food prep the night before. I got lucky, Cole decided to go down for a nap right before I needed to get in the kitchen and get to cookin'. I don't know about you, but I love cooking on Thanksgiving. I like the whole preparation process, the lists, the menu-making, the shopping, the scheduling; do you sit down and schedule out your Thanksgiving food prep? I think I'd be lost if I didn't. Since it was just Cole and I, I didn't have to start our turkey until late morning (we ate around 2:30 or so), it was fun to play and not worry about getting a million things done at once. This year, our Thanksgiving meal was entirely dairy-free, and that was not an easy undertaking, but I loved the challenge, and everything came out better than I could've imagined! I'll share those recipes soon, but for now, I'll share my week in photos:

Day 23: Cozy socks. In case you didn't catch on from a few of my recent posts, I'm a total Whovian. On Saturday, Doctor Who celebrated with a 50th anniversary episode. I didn't get to watch the episode until the next day, but I showed my support (and enthusiasm) by combining two of my favorite things: Doctor Who and tube socks. Match made in heaven.
Day 24: Arranged. In order for our tree to fit in our living room, some rearranging had to happen. You might be thinking, "Lindsey, didn't you put your tree up on the 25th, this is only the 24th, who are you trying to fool?" And I'll say, "I'm not trying to fool anyone, dear friends. I simply forgot to take the photo on the day, and wasn't about to move the tree to make the picture happen. Please accept my apologies, still friends?!"
Day 25: Agenda. Like I said before, I plan everything out for the day. I'm a person who likes lists and schedules. This was the first year that I did a majority of my prep work the night before, and it won't be the last. What a difference it makes! 
Day 26: Television. What else would we watch?! This is my favorite part!
Day 27: Cookbooks. I love my cookbooks. I especially love holiday cookbooks. The end.
Day 28: Thankful. Gosh, I am thankful for so many things. I'm thankful for my husband, Josh, and all he is doing for our family and our great country. I'm thankful for my son, Coleden, he has such a warm heart, and beautiful spirit. I'm thankful for my family and friends, this deployment would be a lot more difficult without your support. I'm thankful to God for providing for my family time and time again, and for giving me strength I didn't know I could possess while my other half selflessly serves his country.
Day 29: Christmas decor. We don't have a chimney to hang our stockings with care, but what's the point of having a cool spiral staircase if you can't jazz it up for the holidays?!

Did you watch the Macy's Thanksgiving Day Parade?! Cole's favorite musical act was the cast from Matilda, he bouncing around and dancing like a fool! I loved the Cirque du Soleil float and Wizard of Oz balloon the best. I'm obsessed with this parade :)

ONE WEEK LEFT!!!

I am so excited that next week is THANKSGIVING!!! Oh. Man. If you read my post from last year (you can read it here if you'd like) you know I'm most excited about the Macy's Thanksgiving Day Parade! I don't know if I'm more excited to watch the parade, or to share this tradition with my son. Thanksgiving is also the day that our family watches "The Wizard of Oz." I love having all of these traditions to share with Cole. This is going to be the best Thanksgiving yet.

Last post of November!

Wow! Sorry it’s been a while; we’ve been moving in and giving thanks. But now I’m back in action and have so much to share!

I hope everyone had a fabulous Thanksgiving and was able to watch the Macy’s Parade!!! Josh and I had a pretty successful attempt at Thanksgiving dinner!!! I was worried that we weren’t going to have enough time, but all of our stuff came out promptly! I guess planning a month in advance really does help!

Josh and I might be thousands of miles from home, but there seems to be one tradition that holds true on Thanksgiving: a food item was forgotten; in our case it was the cranberry sauce. The sad part is, I had it prepared, and put it in the refrigerator so it would be chilled and then I forgot about it. I do think it’s pretty funny that both of our sides have something they forget each year, and I feel like I’ve earned a rightful place in the Thanksgiving Food Forgetters Club! What will I forget next year?!

Forgetfulness aside, I would have to say the best part of my Thanksgiving was that I got to Skype with my family! Especially my Grandma! It was her first time video chatting and she quickly became a pro! I guess if I can’t be with my family for a holiday, the next best thing would be to see them all huddled around a computer screen just to say hey!

Now I’m in full Christmas mode! The most exciting thing so far about the Christmas season is that I have access to the Omaha radio station Star 104.5, so I can listen to Christmas music and catch a little news from home all at once!!! It may not sound like much, but you’d be surprised at how many things we don’t have access to over here.

Now for baby news, or better yet my FAQ:
·       I am 14 weeks and 2 days as of today
·       No morning sickness and yes I am thankful!
·       We do plan on finding out what gender the baby is
·       There are a few names we like, but we’re still looking
·       There have been a few cravings but nothing that strange I don’t think; for a while I couldn’t get enough macaroni and cheese, then tater tots, now its anybody’s guess
·       Not much progress being made in the nursery, but we’re still not fully moved in, hopefully soon
·       Still deciding on whether to register through Amazon or Babies R Us
I think I answered all of the questions I’ve been asked! Thank you all for your interest and concern, I feel so loved!!!

Is it strange that I’m not as curious as I thought I’d be as to what the baby’s gender is?! Sure I’d like to know, but the suspense isn’t killing me like I thought it would be hmm… Any guesses on your end?!

Has it been 12 weeks already?!

I can’t believe that I’m already 12 weeks and some change! This is crazy! This week just keeps getting better too! This Friday, after almost a month and a half of living in a hotel and 3 months of living out of suitcases, we will finally have a place to call home and all of our belongings will be back in our hands!

To be fair, I know there are a lot of people who go longer without their possessions, and I don’t know how they do it. It does make me really appreciate what we do have, and when we have it all back, I will feel blessed!


I don’t think it would be a proper November post if I didn’t mention how excited I am for Thanksgiving!!! Almost a week away! Still have some shopping to do, but we wanted to wait to get the bigger stuff for when we got our house, and all the storage it holds! After that, it’s game on!!! Also, if it’s almost Thanksgiving, then it’s almost time for the Macy’s Thanksgiving Day Parade!!! Yahoo!!!


Now the challenge is to get into our new home, and unpack like crazy so we can find out if our casserole dishes and turkey will fit in our oven-wish us luck!

Happy All Saints’ Day!

Okay, it’s no longer October, and in my mind that means it is time for Thanksgiving!!! But really it’s my excuse to start listening to Christmas music!

Typically, we decorate for Christmas the day after Thanksgiving; last year however, Josh was at BMT so I started decorating around the 5th of November!!! Can you tell who the holiday enforcer is?!


Oh and guess what?! An early holiday gift to us! We are moving into a different place (it’s the same kind of apartment, just available sooner!). I’m really crossing my fingers that we’ll be able to get our stuff on the new day we’re trying to get, that way we aren’t unpacking boxes and stuff the day before Thanksgiving like we were previously going to have to do.


I’m really excited for the coming weeks and I can’t wait to share them with you as they unfold! What are some of your favorite Thanksgiving or Christmas traditions?!
